Uniamo gradatamente il mascarpone e lo incorporiamo al composto. Uniamo la panna montata a cucchiaiate, lavorando l'impasto dal basso verso l'alto. Ora, uniamo gradatamente i bianchi montati a neve e proseguiamo a lavorare con il cucchiaio dal basso verso l'alto stando attenti a non smontare il composto.</span></div>

<span style="font-size: large;">Prepariamo gli asparagi separando le punte dai gambi. Mettiamo a bollire le punte ed i gambi in due pentole separate, in quanto le punte, più tenere, cuoceranno prima dei gambi. Non appena saranno morbidi, li scoliamo e frulliamo i gambi mentre metteremo da parte le punte.</span></div>

<span style="font-size: large;">Prepariamo la besciamella facendo tostare in una pentola capiente la farina e l'olio. Mescoliamo molto bene e versiamo a filo il latte. Se vogliamo velocizzare i tempi è possibile versare il latte già caldo. Sciogliamo i grumi e mescoliamo continuamente. La fiamma è medio-bassa. Facciamo cuocere fino a quando il latte inizia a bollire. Aggiustiamo di sale e noce moscata. Una volta pronta togliamo dal fuoco ed aggiungiamo la purea ottenuta dai gambi degli asparagi. Mescoliamo bene ed otterremo una crema molto molto liquida.</span></div>

<span style="font-size: large;">Prendiamo una teglia da forno e versiamo uno strato di crema, sistemiamo uno strato di lasagne, ancora uno strato di crema, qualche cucchiaio di parmigiano e un po' di mozzarella tagliata a dadini. Procediamo con un secondo strato di lasagne, di crema, di parmigiano e cubetti di mozzarella fino a terminare la crema. Sull'ultimo strato verseremo la crema, le punte di asparagi, la mozzarella a dadini ed infine parmigiano. </span></div>

<span style="font-size: large;">Inforniamo a 200° per circa 20 minuti (forno statico). </span></div>

<span style="font-size: large;">Per far cuocere meglio la pasta, possiamo coprire la teglia con della carta di alluminio, come se fosse un coperchio che toglieremo quasi al termine della cottura per far dorare la superficie.</span></div>

<span style="font-size: large;">In questa ricetta è importante che la besciamella sia molto liquida, in questo modo la pasta cuocerà e resterà morbida ed umida tra uno strato e l'altro.</span></div>

<span style="font-size: large;">Una volta cotte, togliamo dal forno e facciamole riposare 10 minuti, quindi tagliamo le porzioni e serviamole calde.</span></div>

<span style="font-size: large;">In una pentola contenente acqua salata, facciamo bollire i piselli ancora surgelati. Quando saranno cotti li scoliamo e li lasciamo da parte. </span></div>

<span style="font-size: large;">In un mixer frulliamo le uova con il parmigiano grattugiato. Uniamo il latte, il sale, l'olio e pian piano uniamo anche le farine. Facciamo lavorare il robot. Uniamo infine il lievito e mescoliamo bene. Versiamo il composto in un recipiente e con un cucchiaio amalgamiamo i piselli e lo speck tagliato a listarelle. Versiamo il tutto in uno stampo da plumcake rivestito con della carta da forno ed inforniamo a 200° per circa 30 minuti. Forno preriscaldato.</span></div>
